In honor of Mr. Rogers being a vegetarian, I am posting this recipe to coincide with the reading of The Good Neighbor: The Life and Work of Fred Rogers.
Southwestern Salad
6 to 8 cups mixed salad greens
1 (15 oz) can Mandarin oranges, drained
1 (15 oz) can black beans, rinsed and drained
1 carrot, shredded
½ cup red bell pepper, diced
12 cherry tomatoes, halved
3 green onions, thinly sliced
¾ cup jicama, peeled and diced
2 Tbsp fresh cilantro, coarsely chopped (optional)
2 avocados, diced (optional)
Place all ingredients in a large bowl and toss. Serve with your favorite vinaigrette.

I wanted to love this book, and I did love the passion that Fred Rogers had for children. It was one of those books that you want the hero (Mr. Rogers) to do well, but I already knew that through the history of his shows. I have two daughters and they would watch the show on occasion when they were in preschool. I felt that way too much was written about each step of his life, especially after he finished college and the time before his TV show became popular. The author did a very good job telling how Rogers found a new niche in the TV market by aiming his show to entertain children as well as help them with emotional issues and the differences in people. (that we are really more alike than we are different). I am excited for the movie to come out and will be much more informed on the life of this trendsetter in children’s television.
