The novel The Eyre Affair takes place in a very different type of England. There is no mention of The Queen, which made me a little sad to think of the UK without a monarchy.
Steve and I visited Windsor Castle in 2012, the 60th Anniversary of Queen Elizabeth’s reign. While there, I bought some small gifts and a tea towel for myself. After our tour, we stopped at a little cafe for tea. The tea was served with a basket of warm strawberry muffins that were so good. I couldn’t quite place what made them different. Five years later I came across a recipe for Strawberry Bread on one of my favorite sites, Plain Chicken. Instead of vanilla, this recipe calls for cinnamon. That was the mystery ingredient from the cafe in Windsor. The cinnamon really makes a difference in the flavor by brightening it.

- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 2 eggs
- 2/3 cup canola oil
- 1 pint fresh strawberries hulled and chopped

- Preheat oven to 350ºF. Lightly spray a 12-cup muffin pan with cooking spray. Set aside.
- Combine flour, sugar, baking soda, salt and cinnamon in a large mixing bowl.
- Add eggs and oil. Mix well.
- Stir in chopped strawberries.
- Pour mixture into prepared pan.
- Bake for 25 to 30 minutes, until a toothpick inserted in the center, comes out clean.
If you prefer to make a loaf of bread, pour batter into a 9x5x3-inch loaf pan that has been greased. Bake for 55 minutes to 1 hour, until a toothpick inserted in the center, comes out clean.
