The novel Lost Roses centers around Russians during World War I and the subsequent Russian Revolution of 1917. This Russian Cheese Dip is a fantastic appetizer. It is made with Havarti cheese and then mixed with garlic, mayonnaise, radicchio, and green onions. With the texture similar to pimiento cheese, it is easy to mold if you want to get creative with it. We were served something very similar to this at a luncheon during a tour of St. Petersburg. It was spread on top of rye bread. I remember I liked this dip much better than the Russian caviar! (Think Tom Hanks in the movie Big).
