Somewhere Over the Rainbow Bundt Cake

Get Happy: The Life of Judy Garland by Gerald Clarke is my book club’s February 2020 selection. The hostess has decided to have a Wizard of Oz theme for our meeting. This Somewhere Over The Rainbow Bundt Cake will be a fun dessert. There are so many Wizard of Oz theme foods and party ideas there are on Pinterest. Be sure to check my Board out! It will make you smile.

I used six colors to dye my cake batter. The orange seemed to get lost, so next time I will use more of the batter for the orange instead of dividing it evenly for all six colors. The Rainbow Bundt Cake can be made with only four or five colors for more distinct layers. If you prefer pastel colors, use only a drop or two of coloring. It’s fun to play around with the variations. This cake could also be fun for a 60’s themed party since it also looks like tie-dye.

  • 10 Tablespoons butter melted
  • 1 1/4 cups whole milk
  • 1 teaspoon almond extract
  • Food Coloring Red, Orange, Yellow, Green, Blue, and Purple You Pick
  • For The Glaze
  • 1 1/2 cups confectioners' sugar
  • 3 tablespoons water
  • 1/2 teaspoon vanilla extract
