Peanut Butter & Bacon Cookies
smooth peanut butter
light brown sugar
cooked and coarsely chopped
Preheat oven to 350º. Line two baking sheets with Silpat liners or parchment paper.
Using a mixer, combine the peanut butter, ½ cup granulated sugar, and the brown sugar for 2 minutes. Add the egg and baking soda and mix for another 2 minutes. Fold in cooked bacon.
Roll into 24 balls. Roll each ball into the remaining ¼ cup granulated sugar. Using a fork, create a criss-cross pattern by indenting each ball horizontally, then vertically.
Place 12 cookies on each sheet. Bake for 10 minutes, or until lightly browned.
Cool on wire racks for 10 minutes
