  1. Preheat oven to 350º. Line two baking sheets with Silpat liners or parchment paper.
  2. Using a mixer, combine the peanut butter, ½ cup granulated sugar, and the brown sugar for 2 minutes. Add the egg and baking soda and mix for another 2 minutes. Fold in cooked bacon.
  3. Roll into 24 balls. Roll each ball into the remaining ¼ cup granulated sugar. Using a fork, create a criss-cross pattern by indenting each ball horizontally, then vertically.
  4. Place 12 cookies on each sheet. Bake for 10 minutes, or until lightly browned.
  5. Cool on wire racks for 10 minutes
