In The Finn Chronicles: Year One: A dog’s reports from the front lines of hooman rescue we learn that Finn loves peanut butter and bacon. I knew I had to bake these Peanut Butter and Bacon Cookies in Finnegan Count Smooshie Tushie’s honor.
Yes, I know I posted my daughter-in-love’s chocolate-dipped Peanut Butter Balls last year, and traditional Peanut Butter Cookies earlier this year, but these are different. First and most importantly: BACON. Second, these are gluten-free! and, Third, peanut butter and bacon is truly a match made in heaven.

Ingredients
- 1 cup smooth peanut butter
- 3/4 cup granulated sugar divided
- 1/2 cup light brown sugar packed
- 1 large egg
- 1 teaspoon baking soda
- 6 slices of bacon cooked and coarsely chopped

Instructions
- Preheat oven to 350º. Line two baking sheets with Silpat liners or parchment paper.
- Using a mixer, combine the peanut butter, ½ cup granulated sugar, and the brown sugar for 2 minutes. Add the egg and baking soda and mix for another 2 minutes. Fold in cooked bacon.
- Roll into 24 balls. Roll each ball into the remaining ¼ cup granulated sugar. Using a fork, create a criss-cross pattern by indenting each ball horizontally, then vertically.
- Place 12 cookies on each sheet. Bake for 10 minutes, or until lightly browned.
- Cool on wire racks for 10 minutes
