Kielbasa with Potatoes and Spinach
cut into 1-inch pieces
Water to cover the potatoes
dark brown sugar
apple cider vinegar
cut into 1/4-inch slices
In a large skillet cook the bacon until crisp. Remove from skillet, reserving 1 tablespoon drippings. Drain and crumble.
Place potatoes in a microwave-safe dish. Cover with water. Microwave on high until potatoes are tender, 7 to 8 minutes; drain.
Mix together the 1 tablespoon water, dark brown sugar, apple cider vinegar, dijon mustard, thyme, and pepper.
Saute the kielbasa and onion in the bacon drippings until onion is tender.
Add the boiled potatoes; cook and stir until lightly browned 3-5 minutes.
Stir in brown sugar mixture; bring to a boil. Reduce heat; simmer, uncovered, 2 minutes, stirring occasionally. Stir in spinach until wilted. Stir in bacon.
