Kielbasa with Potatoes and Spinach
  1. In a large skillet cook the bacon until crisp. Remove from skillet, reserving 1 tablespoon drippings. Drain and crumble.
  2. Place potatoes in a microwave-safe dish. Cover with water. Microwave on high until potatoes are tender, 7 to 8 minutes; drain.
  3. Mix together the 1 tablespoon water, dark brown sugar, apple cider vinegar, dijon mustard, thyme, and pepper.
  4. Saute the kielbasa and onion in the bacon drippings until onion is tender.
  5. Add the boiled potatoes; cook and stir until lightly browned 3-5 minutes.
  6. Stir in brown sugar mixture; bring to a boil. Reduce heat; simmer, uncovered, 2 minutes, stirring occasionally. Stir in spinach until wilted. Stir in bacon.
