  1. Stir together pimiento spread ingredients in a large bowl.
  2. Divide and spread the 4 tablespoons of mayonnaise on the outside of each slice of bread.
  3. Place 2 bread slices greased side down on griddle or cast-iron skillet at medium heat. Evenly divide the pimiento spread between the sandwich bottoms and spread almost to the edges. Top pimento spread with 2 bacon slices and two tomato slices. Cover each sandwich with a top slice of bread, greased side up.
  4. Grill for approximately 3 to 4 minutes. Flip the sandwiches when golden on the bottom. Continue cooking until golden on the other side. Let sandwiches stand for 2 to 3 minutes before slicing.
