In the book, Girl, Wash Your Face, Rachel Hollis encourages her readers to drink lots of water and to eat a healthy diet. In honor of that, I want to share this Black Bean, Roasted Corn, and Queso Fresco Salad with you.
This salad is delicious and so easy to make. It will keep in the refrigerator for two to three days. It is great for potlucks. The salad can be eaten as is or served over crispy lettuce. The crumbles of queso fresco cheese are placed atop the combination of roasted corn, sliced red onions, hearty black beans, tomatoes, and cucumber and lightly covered with a simple dressing of lime juice and olive oil. It is perfect as a side dish or an entree.

- 1 ear fresh corn grilled and kernels cut off
- 1/4 cup red onion chopped or sliced thin
- 1/2 cup tomato chopped
- 1/2 cup cucumber chopped
- 2 teaspoons olive oil
- 1 tablespoon lime juice
- 1/2 cup queso fresco crumbled
- Chopped lettuce optional

I listened to this book on Audible, and it wasn’t one of my favorite self help books. There were some good things, but I couldn’t really relate to most of what she was talking about. I think possibly because we are in different stages of life. I do think it is a good idea to do a little self examination once in a while, so if it helps someone do that, it’s a good thing.
