The novel, this is how it always is by Laurie Frankel is about families, and what they do for each other out of love. Recently a family member who is on a gluten-free diet came to visit. My sweet daughter-in-love, Sarah, wanted to make sure there was a gluten-free dessert option and made these delicious peanut butter balls. Everyone loved them, including those of us who can eat gluten. I’m ready for her to make some more!
Peanut Butter Balls
2 cups creamy peanut butter
1/2 cup butter
4 cups confectioners’ sugar
3 cups crispy rice cereal
2 cups semisweet chocolate chips
Melt peanut butter and butter in a saucepan, over low heat. In large bowl, mix crispy rice cereal and confectioners’ sugar. Pour the melted peanut butter and butter over cereal and sugar mixture and blend together thoroughly. Form into 1 inch or smaller balls, spread on cookie sheets lined with parchment paper or a Silpat liner. Chill until firm.
Melt the chocolate in a double boiler. Dip each ball in the melted chocolate until completely coated. Place dipped balls back on the cookie sheet. Chill until the chocolate is firm.
