Terry Lynn Crane is an artist, an author, a radio personality as well as a horse lover and an adoring grandmother. Here is one of my favorite recipes from Fiddle Dee Dee Recipes: A Taste of “Gone With The Wind”

Bonnie’s Egg Blossoms recipe by Terry Lynn Crane
4 sheets phyllo dough pastry
2 teaspoons butter (melted)
4 teaspoons parmesan cheese (grated)
4 large eggs
4 teaspoons green onions (minced)
Salt and black pepper to taste
Parsley
Knorr Bearnaise Sauce (1 package)
Prepare Bearnaise Sauce as per directions on Knorr package and set aside. Preheat oven to 350 degrees F. Grease four (2 ½ inch) muffin cups. Brush 1 sheet of phyllo dough with butter. Top with another sheet, brush with butter. Cut the stack into six (4 inch) squares. Repeat with the remaining 2 sheets. Stack three squares together, rotating so that the corners do not overlap. Press into the prepared muffin cup. Repeat with remaining squares. Sprinkle 1 teaspoon parmesan cheese into each phyllo dough-lined cup. Break 1 egg into each cup. Sprinkle minced green onion over egg. Season with salt and pepper. Bake 15 to 20 minutes or until the pastry is golden and eggs are set. Serve with Bearnaise Sauce spooned over the top. Garnish with fresh parsley. These are adorable and were very popular with the guests at Tarleton Oaks, the B&B formerly owned by Fred and Terry Crane.
